In the water it is one of the most beautiful fish in the sea, blue and green and gold and changing colour as it turns. On the deck the colour drains in minutes, which is a small tragedy and a good reason to look while you can.
Where you’ll see it
Offshore, often around floating debris, weed lines and anything that casts a shadow. Sportfishing boats from Coco find them year round with a peak in the rainy months.
What to know
Fast growing, fast living and prolific, which makes it one of the more sustainable fish to eat. Males have the blunt vertical forehead. It is the fish most likely to be on your plate at a Coco restaurant labelled catch of the day, and when it is fresh it is very good indeed.
